How do I make someone appear and talk, but they don’t have a name?

You just leave the name out of the character display name.
So if you want that said character to have a name in the future, you’d have to make two separate characters that look the same, correct?
Yes, that is the way most do it. You could also just use an unnamed character and have it off-screen to make the speech bubbles that you can re-position where needed. (If that made any sense.)
