Early access is just what is sounds like. You pay 8 gems to read a chapter before those who can’t/don’t want to pay gems to read early. It is another way for authors to implement gems to up their ranking without making it impact the plot in any way. A lot of people don’t like this and told episode that but they still made it a feature. 
I personally don’t/ will not ever use my gems for it but if you are impatient and want to support your favourite authors then you can pay for it.
