Yes, it will remain the same unless you code it to change

And then in another scene when I change the outfit back to default, the hair will also change back to the hairstyle that the reader chose?

No, outfit choices modify only the clothes, it will remain the last hair style

HOW TO: Use the previews and unpreviews directing command

The previews/unpreviews feature: This is a directing command in which you can get a character to change out of their original look into something else and then after a while, you can change them back to how they were before. It only works in one episode where you can unpreview/preview outfits and/or features. In the next episode, it automatically defaults to what they originally wore/have regardless of whether you previewed it and let it stay previewed for the entire previous episode. Perfect …

If you only preview the hair style, when you unpreview it it will go back to what the reader choose
