Okaay so, I’m in the middle of planning my first ever story (and yes, I did have to emphasise that) and am finding it hard to plan out every character. My question is: do you plan out every little detail for every one of your characters? - whether that is the main character, love interest, friend, parent, friends parent (you get the gist) - or do you just write down their personality and leave it at that?
I write every idea that pops out of my head and write it in a doc!

I do both of these…like for example i plan/think out ALL my side Characters love interest and how i want them to meet them/the Characters backstory…etc. then i write down ideas that just randomly pop in my mind and if i like the idea i will most likely us it and if the characters personality fits that scene
You don’t necessarily have to write down every little detail about them, because those things should just come naturally to you. Usually, when I create a character; their appearance gives me an overall idea of what they’re like, and I just go from there.
Of course, this isn’t always the case, but it helps to have the basic structure (such as backstory, age, height, and personality) also, moodboards can be a big help in creating the character’s aesthetic/vibe! 
Like the person above me said, it just comes naturally. Sometimes ideas pop in my head while I’m in the shower
I really don’t. I just write, and then write on going by what I wrote.
yes, at least I do, and others might think it different on how they have their characters. For me, I plan my characters depending on what kind of story I will be writing. I’m writing a skating story, so I want to include diversity in my story.

Starting with character’s name, their personality, their zodaic sign, likes and dislikes, hobbies, jobs, age, where are they from, what language do they speak, their religion (opitional), etc.

Ask yourself some questions about your characters, like:
a. Do your character drink/smoke?
b. Is your character a bad guy, or good guy?
c. Do your character have a tragic/good backstory?
Now, let’s say for fantasy, that’s going to be different, so, yeah.
