I’m a bit confused as to what you mean.
Isn’t it the same thing since you already have all the other episodes published? You’re going to publish the whole thing by publishing that last episode this week (or whatever week you were supposed to following the schedule).

I’m interested, though. What is your story called?
Right now, I’m publishing one or two episodes every week.
As it’s almost finished, I was thinking publishing the entire thing all at once.

Oh, okay, okay! I get what you mean now.
I would say you should go for it! Publishing it all can get you more reads (and quicker). A lot of people prefer completed stories, too.
But really, if you want to wait those weeks to make sure everything’s good, then it’s up to you.

I definitely agree with what @Amphia once you completely a story you can start on a new project or make changes to previous episode.
You can always come up with new story after that one instead of so many them it’s hard to keep up with.
