I had commissioned someone to do my cover and they signed the cover, would episode not approve it because of that even though I paid for it

They probably will not accept it no. Ask the artist to remove the watermark for the sole purpose of the app’s cover and give credit in the story itself. If you post it on Instagram or anything just use the watermarked one.
If the artist refuses just try explaining nicely. But also upload the cover now anyway on the off chance episode does let it slide.

Have you tried, beside its called a tag that normal to put on art. I put it on any artwork I draw and I havent tried it get rejected yet
