I want to revamp my story completely but I don’t how to put my story unpublished

You simply have to go to your profile, and click the eye mark that is on top of your story.
Like that, you hide it and no one can see it in your profile. You can unhide any time

There is no way to unpublish a story, the easiest way is to put “REVAMPING FULL STORY” in the title, I do think there is a way to archive the story though. This will make it to where the story won’t appear on your profile and will not be able to searched nor trending, but it will not affect people who have the story in their favorites or have the link.
